Day 5 | It's Day 5!

I can't believe it's day 5 already - the week started off slowly but then quickly. I am already getting into the routine of my day incorporating the plant-based fat free foods. The important thing for me is to get used to the flavors in my new diet after so many years of eating high fat foods.

My immediate goal is to make it through 1 month of the fat free vegan diet (or vegan heart healthy) according to Dr Esselstyn's prescribed program. I have no doubt I'll make it through now that I've converted. To support the diet change I have been researching the vegan lifestyle. I have also been going through recipes online. When it comes to what not to eat, veganwolf.com is very helpful. I'm sure this endeavor will take up a lot of my time going forward.

As I sit here typing I smell the amazing aroma of tomatoes roasting in the oven to the point of carmelization. There is definitely a switch in my thinking about food, health and life, in general. I feel more calm and focused than I have been in so long. I find myself getting things done without thinking about them (and usually talking myself out of doing them...). I am thinking about the near future in a positive and excited way. It was a good day.

Food finds/rediscovery:
  • Claussen sauerkraut - yes, I've had sauerkraut but I didn't realize Claussen produced it! Yum! I eat it out of the jar - it is that good.
  • Sun-dried tomato oil free crackers - OMG! They're light and crispy!!!
  • Sweet hot mustard - wow! I'm going to use this for a honey-dijon dressing recipe
  • Jalapeno mustard (yellow) - I bought this for my mom and she swears by it. It also comes in habanero
  • Dave's Spicy Bread & Butter pickle chips - the spiciness is subtle but these are GOOD!
What I ate today:
  • Green apple
  • Oatmeal with apples
  • Rice crackers
  • Ezekiel raisin bread w/very little sour cherry jam
  • Radishes, bubbies, pepperocinis, Dave's Spicy Bread & Butter pickle chips, salsa
  • Sauerkraut
  • Confetti salad
  • Sun-dried tomato FF crackers
  • Roasted tomatoes
  • Watermelon
