Day 17 | Sight!

I haven't mentioned this earlier but one of the symptoms of having artery blockage is blurry vision. I already have retinopathy so having to use reading and long distance glasses is nothing new but about 4 weeks ago I woke up with even more blurriness - I thought the retinopathy had progressed further. Today I woke up with a marked improvement to my eyesight...what?

So, it looks as though this way of eating is already having a positive impact on my body. I'm losing weight, I have more energy and now my eyesight has improved - I'm thrilled! I have a written list of symptoms and issues I've collected over the past few years when I started gaining weight - I'll put them online so that I can monitor them over time.

Many of my issues can be attributed to diabetes and the medication. While on medication in the past I never was able to lower my sugar to an acceptable level until I lost weight and exercised. The last 3 days my fasting sugar was 112, 110, 110 - it has to be the new way of eating! This is incredible - seriously! This is after 2 1/2 weeks only! Wow!

Food

Today was an exciting food day for me because I was able to have 2 meals in restaurants that were very healthy - fat free vegan, that is. First was my lunch at a small sushi restaurant (Ahi Sushi on Twin Oaks Valley Road in San Marcos) that accommodated my request for cucumber and carrot rolls. I was completely satisfied and I didn't really miss the fish/seafood that I used to have. All the flavors I craved were there but none of the bloat or guilt.

Second, I took my nephew to Fleming's Steakhouse for his 17th birthday celebration. I try to spend quality time with him on or around his special day whenever possible and this was his choice. When making the reservation I let the restaurant know that I eat fat free and though I wasn't expecting to go out of their way to accommodate me, they did. Chef Gardner whisked a fat free salad dressing for me himself to accompany my wedge salad. They added more grape tomatoes and onions since I wasn't having the crumbled blue cheese. The dressing was fantabulous - the chef even brought me 2 containers of the remaining dressing to take home with me. The meal of baked potato and steamed mushrooms and spinach was awesome as well - I even poured more of the dressing over it. I really felt special at a steakhouse, if you can believe it.

What I ate today:
  • Cantaloupe
  • Ezekiel raisin bread with cherry jam
  • Rice crackers
  • Cucumber and carrot sushi (w/soy sauce, wasabi and fresh ginger)
  • Fat free lemon sorbet
  • Iceberg lettuce, grape tomato & red onion salad w/fat free dressing
  • Baked potato
  • Steamed spinach
  • Steamed mushrooms
  • Bubbies
