FF Asian 'Ground Beef' Topping

I call this a 'topping' because you can put it over FF whole wheat pasta (angel hair or thin spaghetti type), baked/smashed/mashed/whipped potatoes or rice (I use instant brown cooked with FF vegetable broth instead of water).

Ingredients:
  • Smart Ground 'Beef' (soy protein) - 1 full pkg
  • Mushrooms - 1 pkg baby portabellos chopped or sliced
  • Onion - diced - qty to taste (I always use a lot because they are good for the heart)
  • Broccoli - chopped - qty to taste
  • Garlic - minced (I use the jar type) - 1 Tbsp (ok to use less if you're not a fan)
  • Cilantro - finely chopped (can omit if you don't like the flavor - added at the end) - qty to taste (I use 1-2 Tbsp depending on how much I have on hand)
  • Corn - freshly cut from the cob or frozen cut - you'll be adding it frozen - should match the qty of the onions and mushrooms
  • Jalapeno - fresh - finely diced (you can't beat the crunchiness this adds to the dish) - at least 1-2 whole ones
  • 1/2 cup Soy Sauce - low sodium
  • 1/4 cup World Harbors Spicy Teryaki Sauce (it's pretty spicy but if you want more heat you can add more)
  • 1 Tbsp Sambal Oelek (Thai chili sauce - not sweet)
  • 1 tsp Garlic Powder
  • Pepper - cracked - to taste (I like to use the multi-colored peppercorn variety)
  • 1/2 tsp Chipotle Powder (can be omitted or increased if you like a really spicy dish)
  • 1/2 cup Water
Instructions:
  • On medium high heat, dry saute the Garlic for a few seconds moving it around the pot quickly, lower heat to medium
  • Crumble the Smart Ground into the pan and quickly mix it into the garlic
  • Add the spices, Soy Sauce, Hot Teryaki Sauce and Water - mix it well with the Smart Ground
  • Add the remaining ingredients except for the Cilantro - mix well together
  • Add Cilantro and fold it into the mixture
  • Cover the pot and lower heat to low
  • Cook for 15 minutes without stirring
  • Turn off heat and stir
  • Mix it into rice, potatoes or pasta, or put it on top of a baked potato and eat!
Notes:
  • You can add other vegetables - just cut them up to be the same size as the other vegies (ex., peas, zucchini, carrots, green beans)
  • You can also eat this plain - it's so good that you'll at least be tempted to serve it this way
